GROW, FORAGE, FERMENT!
Dates: Sat, Oct 20 (LAST SESSION FOR 2018 Season)
Time: 10-12 noon at Little City Farm
Facilitators: Jackie McMillan & Karin Kliewer
A monthly "taste & try" gathering for those interested in learning how to ferment, prepare, and preserve locally available wild foods and local organic farm/garden produce. Each month will feature a wide array of wild foraged foods that are abundant in this season, and we will taste a variety of seasonal recipes (e.g. pestos, drinks, ferments, dried foods, and other wild edibles).
For example, May will feature wild edibles such as a dandelion-nettle kraut and wild greens pesto. June will feature spicy radish ferment, rhubarb syrup, herbal chimichurri, stuffed wild grape leaves, and how to dry wild berries. July will feature various culinary herbs, all about edible flowers, wild berry jams & fruit leathers, veggie chips, and herbal vinegars. The fall will feature wild berries, syrups, and more.
Why Wild Forage?
Wild foraging connects us to our past. When done sustainably and with proper care, foraging provides free food that is often overlooked (as "weeds") in our cities, offers unique flavours and nutrient-dense probiotic-rich food sources, is a deeply satisfying hobby, brings connection to place, and a greater awareness of what is available to nourish us right in our own backyards, parks and trails. Why not forage?
Lacto-Fermentation is a wonderful traditional way to preserve foods using a simple salt-water brine. The lactic acid fermentation process boosts nutrients, makes veggies highly digestable and rich in probiotics which are great for our gut health! Best of all, fermented foods offer a wide variety of delicious flavours and textures, and are easy to prepare with minimal equipment. Why not ferment?
